Phytoalexins are antimicrobial substances produced by plants. They are secondary plant metabolites that are formed by the plant after contact with invaders like moulds, viruses or bacteria, in order to prevent them from spreading throughout the plant. Salvestrols belong to the group of phytoalexins.
Due to the use of pesticides, conventionally grown vegetables and fruits rarely come into contact with moulds or bacteria. Therefore, their content of salvestrols is usually lower than in organically grown food.
